Something that I might suggest to help fix the textureless issue is try to find a texturepack that supports mocreatures, it might then be able to put the textures on them, and if that works, you could create a custom texture pack with the default appearances of these animals as a work around Mobs Invisibles. Ostriches spawn on grass and in deserts at light levels of 9 or more with at least 2 block space above. They often spawn in flocks of during world generation.
